La Casara offers us a high-quality Parmigiano Reggiano DOP, aged for 24 months. It is the version most closely linked to the Emilia Romagna region, made from cow's milk sourced from cows that have been raised only on hay without the use of feed. A product that is very precious and refined in its scents and aromas.
Regarded as the "King of Cheeses", it is still produced as it was eight centuries ago using a natural artisanal method, and it is one of the few remaining foods that are obtained in a completely natural way, without any additives: only milk, rennet, and a little salt.
Its production is regulated and controlled by law by the Consorzio di Tutela del Parmigiano Reggiano. The use of raw milk, the exclusion of additives, the use of natural lactic ferments, and aging for at least 12 months are the key elements for the recognition of D.O.P. (Protected Designation of Origin recognized by the European Union).
The 24-month aged Parmigiano Reggiano DOP is ideal for large events and ceremonies. Unbeatable grated as a seasoning for pasta dishes, rice, and soups, even the rind can be added during the cooking of minestrone and vegetable creams; exceptional in thin petals on carpaccio of fish or meat, or on roast beef, with arugula and a drizzle of extra virgin olive oil.
Excellent eaten alone or paired with dried fruits, nuts, hazelnuts, dried figs, dried plums, and honey. To delight the most refined palates, it is extraordinary with balsamic vinegar.
We present this delicious cheese in a small portion of about 200 grams, ideal for singles, for a tasting trial, or for a romantic dinner for two.
