This is a fresh goat cheese, aged for a maximum of 30 days, so a short maturation, and it is produced with pasteurized goat milk.
The rind is almost nonexistent while the paste is compact, soft, and elastic, white in color with a scattered eye formation. Its aroma is that of typical goat milk but, overall, pleasant and very fine, sweet; its flavor is velvety, fresh, and elegantly balanced.
