The Mountain Goat Toma is another small masterpiece from Opere Casearie. It is a cheese made from raw goat milk produced in Valchiusello, the valley where the cheese factory is located in Baldissero Canavese.
Its paste tends to melt in the mouth and has the characteristic sweet and delicate flavor that becomes more intense as it ages. The essential months of refinement take place in the cellar of Giuseppe Bernardinelli of I Sapori del Portico, maintained at controlled temperature and humidity.
The Goat Toma from alpine grazing with vegetable rennet (which we present here in a portion of about 200 grams) is perfect with a crunchy loaf of cafone bread and a good glass of dry and slightly aromatic white wine like Sauvignon Blanc and Pinot grigio.
It is an excellent ingredient for risottos, but it shines perfectly in a warm savory pie with caramelized onions and a floral pint of Blond Ale.
