This cheese has its roots in history. In the past, to protect cheese from theft, the wheels were hidden under fruit or in hay. In these hideouts, the cheese would take on unexpected aromas and flavors. Experience has transformed this necessity into a technique that Corrado Benedetti has perfected. The cheese wheels are cleaned and, in this version, immersed in a puree obtained from the maceration of pears, where they are allowed to rest. Subsequently, they are taken out of the tanks and left to mature. Thanks to this process, the pears impart delicacy and a pleasant character to the semi-fat cheese.
