This product is prepared using the eggs of sea urchins from the characteristic Galician rías, narrow and long inlets that penetrate the coast of northwestern Spain. The caviar is obtained through the processing and salting of these eggs.
Sea urchins inhabit the waters of the Galician inlets in areas that are typically rocky and sandy, where they feed on algae, plankton, and small mollusks. They are harvested between the months of November and April using professional diving techniques, but there are also areas where foot fishing is possible without the use of boats.
