Aità is the pure Fiano from the DOC Sannio located in the province of Benevento. These are pleasant, unspoiled territories of great scenic value, and it seems that time has stood still here.
Produced from vineyards trained in guyot on a clayey soil. The harvest takes place in the first decade of October, yielding about 75 quintals/ha. The pressing of the grapes is gentle and fermentation occurs in stainless steel at a temperature of 15 - 17°C.
The aging is done in stainless steel for 6 months and finally in bottle for 4 months.

Produced in hilly areas, it breathes the fresh breeze of the inland and the salinity of the sea. Inside you will find everything, the sun of the south mixed with the freshness of Sannio. Pleasantly fruity on the nose with citrus and yellow stone fruit sensations, particularly apricot and peach. Notes of Mediterranean scrub, sage, and rosemary with a hint of wild mint. On the palate, it is decidedly salty with a nice fruity freshness.
Wide and moderately persistent, it finishes with a delicate sensation of sweet almond.
Store in a cool place, away from direct light, vertically.
