The Seasoned Speck Kreuzspeck from Prosciuttificio Crosare, carefully selected by Salumificio Freoni Danzi, is produced from a selection of fresh hams from pork deboned, trimmed in the typical speck shape of shield or baffa, deprived of the thigh and cleaned of fat, a process that gives this cured meat its typical heart-shaped and flat form.
Prepared this way, the hams are worked with a brine and a seasoning whose recipe is a secret that is closely guarded by the prosciuttificio; next comes a light massage that not only makes the meat more tender but also evenly flavors it. Finally, the hams are naturally smoked with beech wood. The aging lasts at least 4 months.

It is absolutely worth trying cut thicker and served on a bed of arugula with a drizzle of good balsamic vinegar.
