The sour cherry jam is produced using exclusively the sour cherries from Luca Tenti's farm, processed within a few hours of harvest.


Sour cherry jam: how it is made

The jam is made using exclusively freshly picked sour cherries, with the addition of a little sugar, without adding thickeners, pectin, or preservatives. The sour cherries make up about 80% of the raw material, and to obtain 100g of product, 120g of fruit are needed.
The sour cherries are processed using the vacuum cooking technique, that is, at low cooking temperatures for a short period, in order to preserve the quality of the raw material, maintaining the bright and natural color of the sour cherry, the true flavors, and all the organoleptic characteristics.

What is the sour cherry?

The sour cherry (Prunus cerasus variety austera) belongs to the group of sour cherries, such as amarena and marasca, but differs due to its higher degree of acidity at ripening. The sour cherry is a small fruit, flattened at the poles, with a deep purple color of the flesh and the skin, an intensity that we also find in the taste with bold and specific hints. Sour cherries should not be confused with wild cherries or amarena, which are significantly sweeter.
