The sour cherry jam is produced using exclusively the sour cherries from Luca Tenti's farm, processed within a few hours of harvest.

 

What are sour cherries?

The sour cherry (Prunus cerasus var. austera) belongs to the group of sour cherries, like amarena and marasca, but differs due to its higher degree of acidity at maturity. The fruit is small, flattened at the poles, and has a deep purple color for both the pulp and the skin, an intensity that is also found in the taste with strong and specific notes. Sour cherries should not be confused with wild cherries or amarena, which are significantly sweeter. 

Visciole jam 100g: How is it produced

The jam is produced using exclusively freshly picked sour cherries, with the addition of a little sugar, without adding thickeners, pectin, or preservatives. Sour cherries make up about 80% of the raw material and to obtain 100g of product, 120g of fruit is needed.
The sour cherries are processed using the vacuum cooking technique, that is, at low cooking temperatures for a short time, in order to preserve the quality of the raw material, maintaining the vibrant and natural color of the sour cherry, the true flavors, and all the organoleptic characteristics.
