The Ribolla Gialla DOC Collio is a still white wine that expresses the typicality of the production area. It is documented in some notarial records of the time that this grape variety was present in the area as early as the 14th century and that Ribolla wine was used as currency: debts were paid with bottles of wine.
The Ribolla Gialla grapes are harvested as the last white grapes, in the last decade of September. The wine has a pronounced acidity and a relatively low alcohol content compared to other wines produced.
