Fresh Black Hooked Truffle 500g

The Uncinato Black Truffle, the Tuber uncinatum Chatin, is harvested and consumed from October 1 to December 31 and is considered by many to be a premium variant of the summer scorzone.
It is harvested and cleaned for us by Tartufi Bianconi, who will ship it directly to your home.
On this page, we present it in quantities of 500 grams.


Uncinato Black Truffle: characteristics

The Uncinato Black Truffle owes its name to the particular shape of its spores which, observed under a microscope, show small filaments resembling hooks.

The Uncinato is very similar to the Scorzone, but has some characteristics that differ from this type:
-the outer part (called peridium) is warty, however, made up of less pronounced black warts than those of the Scorzone;
-the flesh (called gleba) is darker than that of the Scorzone, almost chocolate-colored when the truffle is very mature, and is crossed by very branched white veins;
-its shape is variable, it can be round but also flattened;
-its size varies from that of a walnut to that of a tennis ball, and is generally smaller than that of the Scorzone.

Being a product that grows spontaneously, it can vary greatly in shape and size, and may show external scratches or other imperfections that, on the contrary, certify its naturalness.

Storage instructions: the Uncinato Black Truffle can be stored in the refrigerator for 7 to 15 days between 2°C and 6°C, wrapped in absorbent paper.

Fresh Black Hooked Truffle 500g: use in the kitchen

The Black Uncinato Truffle has delicate, well-defined, and intense aroma and flavor, with notes of hazelnut, porcini, and grated cheese. Perfect for multiple uses in the kitchen, both cooked and raw.
It can be used to prepare tasty sauces to dress pasta or risottos, but it is also used to flavor cheeses and cured meats. Excellent on soft fried eggs or poached. Inside omelets with wild vegetables. Ideal for dressing grilled beef steaks. For fresh tagliolini and short pasta. To be paired with structured white wines and fresh red wines like Valpolicella Classico or Sangiovese from Maremma.

Availability and prices can vary significantly during the season, even weekly.
The individual weights of the truffles can range from 15 to 50 grams or more depending on availability.
Orders are shipped directly from the producer from Monday to Thursday.
The fresh truffle will be shipped inside a patented polystyrene package created specifically to maintain its freshness and will be accompanied by a quality certification from mycologist Saverio Bianconi.
