The Barolo DOCG Rocche di Castiglione 2015 by Sordo Giovanni is an austere Barolo with excellent structure, complex in aromas and appealing to the taste. A great red wine, capable of aging magnificently over the years. It is a wine to be opened for the most important occasions. A Barolo truly with a capital "B"!
Grape variety: 100% Nebbiolo
Vineyard: located in one of the most vocated areas of the municipality of Castiglione Falletto.
Soil: medium-textured, loose on the surface and tending to calcareous. Just over a meter deep, there are hard layers of white-gray and bluish marls, alternating with layers of dry and compact sandstones, belonging to the Elveziano period.
Training system: Guyot traditional pruning with trellising
Winemaking: Destemming-crushing, fermentation in stainless steel tanks at controlled temperature with a long submerged cap maceration from 4 to 7 weeks, depending on the vintage. Natural malolactic fermentation at a temperature of 20°C. Storage in stainless steel for 2/4 months.
Aging: 24 months in large Slavonian oak barrels.
Refinement: 4/6 months in stainless steel and a minimum of 6 months in the bottle.

The Barolo DOCG Rocche di Castiglione 2015 by Sordo Giovanni is a perfect Barolo to enjoy during dinners with friends. It pairs wonderfully with dishes based on red meat and game.
Color: bright and clear garnet red in the glass.
Aroma: the bouquet is composed of notes of dried flowers, hints of ripe berries, and tertiary nuances of licorice, mint, sweet spices, cedar, and sandalwood.
Taste: full-bodied and velvety in its tannic texture, balanced and with a long finish.
Serving temperature: 16 - 18 °C
