The Gorgonzola DOP piccante by Arrigoni is a blue-veined cheese, soft, made from raw whole cow's milk, named after a town in Lombardy near Milan where it is said to have been created in the 12th century to salvage a forgotten curd from the day before.
The spicy version features more pronounced blue/green veins, a firmer and drier texture with a stronger flavor due both to the types of molds used and the extended maturation.

The Gorgonzola DOP piccante from Arrigoni (which we present here in a half wheel of about 6kg) is an excellent blue cheese to pair with mascarpone, perhaps garnished with walnuts. You can also enjoy it with fruit, vegetables both cooked and raw, jam, honey, mustard, and chocolate.
Taste: strong and spicy.
Crust: compact, rough, hard in gray/pink color, inedible.
Paste: straw-colored, crumbly, characterized by an intense development of green molds.
