The Sboccato di Sant'Alberto from the Caseificio Buon Pastore is a hard and raw cheese made from sheep's milk.
It has a cylindrical shape with straight sides and flat faces. The paste is semi-hard, ivory-colored, compact with small holes. The rind is slightly amber with regular grooves due to the particular processing in woven molds.
Aging ranges from 2 to 12 months on wooden boards in caves.
