The Teodorico from Caseificio Buon Pastore is a hard and semi-cooked cheese made from sheep's milk.
It has a cylindrical shape with a rounded or straight edge and flat faces. Its paste is elastic, compact with small eye holes, and light straw yellow in color. It has a smooth, slightly amber rind. It ages for 2 to 12 months on wooden boards in caves.
