Aged Pecorino Refined in Wine 300g

The Wine Aged cheese from Caseificio Buon Pastore is a raw and semi-hard cheese made from sheep's milk. 

Physical appearance: cylindrical shape with rounded or straight edges and flat faces.
Texture and color of the paste: compact paste of straw yellow color.
Type of rind: smooth, compact, deep purple color.
Aging: it is washed in wine for 60 days, then aged for 2 to 12 months.
Allergens: MILK and SULFITES

Shelf Life: 6 months

Aged Pecorino Refined in Wine 300g: use in the kitchen

Its pasta is a compact straw yellow color with small holes. The maturation takes place by immersing the cheese in wine so that tannins and polyphenols perfume and color the crust.

Pleasantly velvety but with an intense flavor near the crust. The Affinato al Vino from Caseificio Buon Pastore is a cheese to be tasted on its own.

Recommended wines: young and smooth red wine.
