Il Guidarello from Caseificio Buon Pastore is a raw and semi-hard cheese made from goat's milk. 

Physical appearance: cylindrical shape, flat faces, and slightly convex rim.
Texture and color of the paste: elastic paste, pearly white in color with sparse and small irregular holes.
Type of rind: the rind is smooth, thin, and elastic with a light yellow color.
Aging: from 30 to 90 days in a cave on wooden boards 
Shelf Life: 6 months
