The Caciocavallo calabrese dolce from Casa Folino is a semi-aged stretched cheese made from 100% cow's milk, characterized by its elongated flask shape with round base and head, typical of southern Italy.
The well-defined and savory flavor is obtained thanks to the traditional brining process and long aging, typical of Calabria.
It features a compact and semi-hard texture when cut, with some slightly distributed small holes, and a color ranging from light straw yellow to brown with a smooth, polished, and shiny rind.
Ingredients: PASTEURIZED whole cow's milk, salt, rennet, live lactic ferments.
