The Pecorino Bagnolese aged in Taurasi wine from Milk Coop is a cheese that is considered unique in its kind as it represents a dual excellence from Irpinia: the raw material, that is the milk of the Bagnolese sheep, and Taurasi wine, precious and known to connoisseurs. To define this exquisite cheese is reductive!
The milk used to produce the pecorino cheese with Taurasi wine comes from the Pecora Bagnolese, also known as Malvizza. The genuineness of the product is precisely linked to these latter! The reason? The Malvizza sheep are left in the wild and feed on what nature offers them along the paths of the Irpinian pastures.
The cheese is then immersed in Aglianico Taurasi wine until it externally turns a dark color. It is at that moment that the aroma of the wine has definitively transferred to the cheese.
This cheese represents the union of two Irpinian territories: Bagnoli Irpino for the milk and Taurasi for the wine.
The aging of the pecorino bagnolese in Taurasi wine is about 9 months.
For the production of pecorino cheeses, only the milk of the bagnolese sheep is used, while for dairy products, milk from cows coming from the Irpinia and Sannio pastures is used.
