The Salame di Cinta Senese DOP from San Gregorio is an absolute specialty of Tuscany, specifically Siena. This incredible cured meat is obtained exclusively from pure Cinta Senese DOP pigs slaughtered between 12 and 16 months.
The mixture is made exclusively with the selected parts of the shoulders finely minced, pancetta, and the classic lard in cubes cut strictly by hand. The mixture is then stuffed into natural pig casings. The aging process occurs naturally for about 2 months.

It is ideal for gastronomic pairing with fresh figs and fresh Pecorino Toscano DOP. It pairs excellently with red wines from the Tuscan tradition, such as Chianti or Super Tuscan.
