Pickled Puntarelle are a typical preparation of the tops of chicories, that is, the shoots that form in the inner part of the head of the “catalogna” chicory, lightly blanched in water and vinegar, and then seasoned with extra virgin olive oil.
With a unique and irresistible taste, they are the fruit of the Puglian tradition, preserved in such a way as to bring all the flavor of this land to the table, every month of the year.
