This pecorino is characterized by its smaller dimensions compared to typical Sardinian pecorinos, with a reduced diameter and a greater height of the edge.

This cheese is protected by the Presidium, an organization that brings together local producers and promotes the creation of a dedicated association. A strict production specification has been established to ensure the quality and authenticity of the Pecorino di Osilo. Only local breeders can produce this pecorino, and only shepherds from the historic production area around the municipality of Osilo are allowed.

The Presidium's specification prohibits the use of milk from multiple farms or from sheep raised indoors, thus ensuring that every form of Pecorino di Osilo is genuine and respects the ancient traditions of the region.
