Valpolicella Ripasso Superiore DOC - Giarola Winery: How is it produced

The Valpolicella Ripasso Superiore DOC is produced through a unique technique that involves the refermentation of fresh Valpolicella with the pomace previously used for the fermentation of Amarone. This pomace, obtained from grapes of the same harvest destined for drying, imparts complexity and structure to the wine.

Subsequently, the wine matures for 14 months in French oak barrels, gaining nuances and depth. Bottling takes place in a sterile line with vacuum sealing to preserve the quality and integrity of the wine. Finally, it is completed with a bottle aging of about 6 months, during which the wine further develops its bouquet and harmony of flavors.
