Raw cow's milk cheese is born from the meeting of two great traditions: the Belluno cheese-making tradition and the Romagna aging tradition. This cheese, with its particular organoleptic characteristics, is produced in the Belluno Dolomites.
After an aging of over 12 months, there follows an additional anaerobic refinement of 3 months in the typical pits of Sogliano al Rubicone. The resulting product has unique olfactory and taste characteristics; intense, pleasant, and persistent flavor. LE TRE EFFE emphasizes the imprint of Foraggio, Fragranza, and Tuff Pits.
