The Speck "Larcher Family" from Mendelspeck is an exclusive product, made with national pork, processed following a recipe handed down for generations. This specialty is produced using only the best cuts, devoid of bones and slightly rounded, to achieve a compact texture and a classic shape.
The processing begins with a brining phase, followed by a delicate natural smoking obtained with selected woods like beech. Each piece is hand-massaged and subjected to a minimum aging of 32 weeks, thus ensuring a unique and unmistakable flavor, ideal for special occasions.
Production takes place in two main phases: initially, at the facility in Termeno along the Wine Road, the meat is selected based on weight and quality, and each product is processed with the utmost care. Subsequently, after a light smoking, the products are transferred to the Passo di San Lugano, at about 1000 meters above sea level, where aging occurs in optimal climatic conditions.
