It is a simply exciting and rare cheese. Aged up to 18 months, it is produced only with summer milk from the high mountain pastures of Lessini.

Very hard to cut into flakes, it is rich in aromas of honey, dried fruit, melted butter, herbs, and ginger.

Great intensity on the palate with a nice creaminess and pleasantness in the finish of toasted almonds and sweet spices. 
 
La Casara won the 32nd edition of the Festa del Formaggio Monte Veronese, in the Monte di Malga category.

La Casara Roncolato, Veneto

Among the hills of Roncà, beneath the ancient volcano of Calvarina, the story of the Roncolato family and their cheese factory begins. In the 1920s in Brenton, Ermenegildo, along with his sons Angelo and Romano, started the activity of cheesemaking. Green pastures rise up to the highest peaks of the Lessini Mountains, the Little Veronese Dolomites. Since 1964, the cheese factory has been taken over by Romano and he will call it La Casara. This long tradition continues today with the children Giovanni, Gildo, and Letizia and has become one of the most important and refined realities in the Veneto and Italian production panorama. Giovanni has been the true promoter of the revival of the DOP (Protected Designation of Origin) Monte Veronese cheese and has especially sought, from the very beginning, to bring young people back to the Veronese mountains to reclaim the tradition of the malghe. Today, La Casara is awarded in international competitions and offers a wide range of own-produced cow, goat, and sheep cheeses. Over time, Giovanni has become a refined selector of cheeses from all over the world, and here we present some of them. La Casara also has its own production of cured meats thanks to free-range farming in the lands of Brenton, where the famous and rare soppressa comes from. Authentic flavors, uniqueness, and genuineness are the fundamental characteristics of this beautiful Italian reality.
