Taleggio PDO whole wheel 2kg

The Taleggio DOP is produced in the Val Taleggio, in the province of Bergamo. Originally created as a stracchino, it gained value especially from the early 1900s to differentiate it from this typical Lombard cheese. Taleggio is a raw milk cheese made from cow's milk, inoculated with microbial species that impart its strongly identity-driven flavor. It ages for a minimum period of 35 days.


Taleggio Cheese: Did you know?

The history of Taleggio is closely linked to the Val Taleggio, a beautiful corner of the Bergamasque mountains, from which it obviously takes its name, but over time its production has expanded to a very large area that includes a large part of Lombardy, Piedmont, and the province of Treviso, in Veneto.
Another interesting fact: the mountain artisans initially brought the dairy technique to the plains as a system for preserving milk. The first name given to this cheese, as already mentioned, was Stracchino, from "stracc," meaning tired, since the cows returned weary from grazing in the mountains.

Taleggio PDO whole wheel 2kg: use in the kitchen

The Taleggio DOP is a table cheese that enhances polenta, especially the coarser, rough, and whole grain type. Excellent for mountain-style polenta and for flavoring meat rolls or typical tortelli like the bergamaschi capunsei.

This is a cheese with pronounced sensory notes, so for cheese lovers, it is also recommended to consume it on its own or alongside mustards, jams, or preserves, as great connoisseurs know how to do. It should be tried with apples, pears, or figs!

It pairs well with dry and slightly aromatic white wine such as Sauvignon Blanc and Pinot Grigio. Also excellent with moderately structured red wine.


Taleggio DOP: organoleptic characteristics

Crust: Thin and pink.
Paste: raw, with a white color tending to straw yellow and melting under the crust.
Structure: soft and slightly elastic paste.
Flavor: sweet, with a very slight acidic note, slightly aromatic, sometimes with a truffle aftertaste.
