Made from raw cow's milk, placed in the pomace of Recioto and aged for 11 months. It takes on a particular aromaticity and a pleasant spiciness. The Ubriaco di Recioto is a cheese for true connoisseurs, in search of something unique. The spiciness merges with the sweetness of the sugary notes of the Recioto passito di Gambellara and the delicate notes of milk.

Cheese with flat faces. The rind is a deep straw yellow color speckled with dark brown tones, a color transmitted from the grape pomace that remains in the imperfections of the rind. The paste is a rich yellow and finely dotted. Originally a hard cheese, it takes on a slight softness during the processing phases with the pomace. Compact consistency that, depending on the aging, allows for use in grating.
