Whole organic national cooked ham - 8/9kg
This salami comes from the salting and cooking of the pork thigh. It is the same portion of the animal used to produce Crudo. It should not be confused with the Shoulder, which comes from a less prized part of the pig. The pig, after being deboned, is placed in a brine containing spices and salt; subsequently, it undergoes churning, allowing this brine to penetrate all parts of the meat, followed by pressing in molds that give it the classic shape and then steaming. It is defined as national because the meat is 100% Italian.

Salumificio Pedrazzoli, Lombardy
Pedrazzoli has been the first salami factory in Italy to produce organic (BIO). Since 1996, it has added this segment, which becomes increasingly important each year. Cereals and food products come from organic farming, open-air breeding, drastic reduction of preservatives, GMO-free, and limited salt and fat content. The entire production is particularly suitable for the diet of celiacs and the dietary management of intolerant individuals. Many of these cured meats are listed in the national pharmaceutical handbook for celiacs.
The Bio Primavera line was awarded in 2013 in Paris with the prestigious Good Pig Honor Mention during the Animal Welfare Awards. The ceremony showcased the entire European market, and Italy was represented by the Pedrazzoli family. The Good Pig Honor Mention was awarded for "the commitment to the welfare of sows, demonstrating how it is possible to make choices that also benefit animal welfare".
