This cured meat comes from the salting and cooking of the pig's ham. It is the same portion of the animal used to produce Prosciutto.
It should not be confused with the shoulder, which comes from a different, less valuable part of the pig.
The pig, after being deboned, is placed in a brine containing spices and salt; then it undergoes a churning process that allows the brine to penetrate all parts of the meat, followed by pressing in molds that give it the classic shape and then steam cooking.
It is defined as national because the meat is 100% Italian.

Il maiale dopo essere stato disossato viene posto in una salamoia contenente le spezie e il sale, successivamente si passa alla zangolatura che permette a questa salamoia di penetrare i tutte le parti della carne, quindi la pressatura negli stampi che gli conferiscono la classica forma e quindi la cottura a vapore.

Pedrazzoli has been the first cured meat producer in Italy to produce organic. Since 1996, it has added this segment, which becomes more and more important every year. Cereals and food products from organic farming, livestock raised in open spaces, drastic reduction of preservatives, GMO-free, limited intake of salts and fats.
