Gonzaga lard 450g vacuum-packed

The lardo di Gonzaga is an ancient product that carries with it tradition and genuine goodness. This layer of pearly-pink fat is found under the skin of the pig.

The lardo has a moist appearance and features a homogeneous and soft consistency. It is a coarse and precious cut taken from various parts of the animal's body, including the neck, back, and upper flanks.


PROCESSING


This product is then placed in contact with a mixture of fine aromatic herbs and spices and is periodically massaged in order to help the fat structure absorb the produced aromas. Finally, it is left to mature in closed, cool places with a certain level of humidity.

The Lardo di Gonzaga, served in slices, is sliced thin and paired with hot bread croutons. Special pairing with balsamic vinegar. It has a good marriage with structured white wines, including aromatic ones. The Traminer is recommended.
