I pig's cracklings, which in Mantova are also called Greppole, originated as a humble, countryside food, hence high in calories, often served at the table alongside polenta. Today, however, they have become trendy as a snack to enjoy during an aperitif or to be added to enhance flatbreads or less flavorful dishes.
Pig's cracklings: what are they?
Pig's cracklings are made from pig meat and specifically from the fat of the pig. They are produced by separating the skin from the fat and cutting the latter into cubes. The cooking process then involves slow cooking over low heat. The water from the tissue is removed and the fats are melted. The remaining solid is then hand-pressed with a cloth, after which the cracklings are salted and flavored. The next step is pressing to drain all the fat. This results in crunchy and very flavorful meat cracklings.

Pedrazzoli is one of the few medium-sized family-run cured meat companies still operating with a complete supply chain: from cereals and other products for livestock feed to the processing of the final product.
