The Padus from black pig is a product that offers a beautiful complexity of aromatic sensations and a very heterogeneous intensity of fragrances. The meat is velvety, with a concentration of fatty parts very well blended that does not give a particular greasiness. An excellent cold cut for large aperitifs with classic method sparkling wines. It is also great with structured red wines such as a nice Valpolicella Superiore or Ripasso della Valpolicella. Additionally, a good Nebbiolo from Langhe and a Maremma Sangiovese. Try it on a warm and slightly toasted slice of bread. Serve at room temperature to retain all the pleasantness it can offer.
