The protagonists of our story are Matteo and Luca, two friends who have been inseparable since childhood, united by the same indelible passion for nature and good food, understood as tasty and healthy. The story of Ricetta91 starts with a long friendship, that between Matteo and Luca. Friends since always, despite different stories and paths, Matteo and Luca share the same passion for nature and good food. Thus, the idea of creating something personal was born to give concreteness to their passions. Here unfolds a dream, which today can be called Ricetta91.
The main purpose is to offer healthy and genuine food, using primarily high-quality raw materials, all cultivated and processed directly in the company. However, Matteo and Luca have a project that goes far beyond production.
The two friends, fully aware of the importance of protecting the territory, decided to combine quality and culture of tradition with respect and safeguarding of the environment, paying particular attention to operate
in a sustainable way from both a water and an energy point of view. Is there perhaps a better way to honor and thank the Colli Euganei? In fact, it is precisely the land of this region that allows for 100% natural production, in total absence of any chemical additives.
The added value to production is then given by Matteo and Luca, who, once the raw materials are harvested, work to transform them within 24 hours, preserving freshness and taste and guaranteeing an exceptionally high quality of the final product. And it is precisely for this reason that the products of Ricetta91 represent what is good to bring to the table every day, both at breakfast and during meals: vegetable jams, fruit jams, preserves, and syrups.
Matteo and Luca use typical recipes of the Venetian culinary tradition, rediscovering those lost flavors and aromas or those that characterized their childhood, trying to reinterpret them in a modern key so that they stand out for their freshness.
The project behind Ricetta91 is very ambitious. It does not consist only of the creation of a good and genuine product but also in spreading a lifestyle in perfect harmony with nature.
All that’s left is to meet the two authors of this ambitious project, worthy of praise also for the young age of its creators: both Luca and Marco are indeed from the class of 1991. But where does their passion for the art of good cooking come from?
Luca, in reality, comes from a very different agricultural and culinary background. Graduated in Law from the University of Padua, he decided to follow a passion that had emerged already in early childhood. Indeed, since he was a child, he worked in the family farm as an assistant, immediately connecting with agriculture and nature.
Not much different is the story of Matteo: graduated in Management Engineering from the University of Padua and then continuing at the Polytechnic University of Turin, since he was little he helped his grandfather in cultivating the family garden and fields.
In both cases, it is a passion that was born during childhood.
A few years after finishing their studies, they decide to join forces and bring to life Ricetta91, whose name encapsulates the business philosophy: the word recipe indeed indicates that the products are the result of ancient recipes of tradition revisited in a modern key, while 91 is precisely the year of birth that unites them.
Today, the goal is to amaze the market with the quality that only those who control the entire supply chain can guarantee. Matteo and Luca strongly believe in organic and are now awaiting certification. The raw materials suffer no chemical treatment, thus producing natural products without additives and colorings, with low sugars and truly genuine and, above all, completely sustainable, given that neither pesticides nor chemical fertilization are used. The first product we present is the green tomato jam, a healthy and genuine product, but above all very flavorful. The tomatoes, harvested at mid-ripeness, are processed within 24 hours and left to macerate with sugar and homemade white wine for at least 12 hours. Finally, a slow cooking is planned until the desired density is reached. The green tomato jam is truly strong and is perfect on toasted bread, paired with an excellent glass of sparkling wine and a good aged pecorino or similar cheeses, but also alongside grilled meats or roasts. This jam is ideal for a true and sophisticated aperitif thanks to the perfect balance between the acidity of the green tomato and sweetness.
Unmissable is the pomegranate syrup, a truly versatile taste concentrate. Made with Wonderful quality pomegranates, hand-seeded and cold-pressed to preserve their color and quality, it is a type of pomegranate molasses obtained by boiling the juice of the seeds and then thickening it with sugar.
The pomegranate syrup is an authentic product with ancient origins. In the past, it was indeed an ancient remedy against cough, which is why having a jar in winter is a must. Moreover, pomegranate syrup is a basic ingredient in many Middle Eastern recipes. Perfect also as an accompaniment to super-aged cheeses (Stravecchio, Grana Padano, etc.) and aged Pecorino. In short, it is truly a versatile product!
The pepper jam is a product destined for all lovers of this delicious summer vegetable. For its preparation, yellow, red, and green peppers are used, harvested and processed within 24 hours, then cut and left to macerate for at least 2 hours and 30 minutes. The pepper jam is a perfect product for breakfast or as an ingredient for cakes, ice creams, and omelets, and is highly recommended also with semi-aged cheeses and roast meat.
Let’s move on to the red beet jam. The red beet is a vegetable often difficult to enhance but which, if you did not like it, you could reassess thanks to this genuine and tasty jam. The secret of this jam is that few but quality ingredients are used. The beets are left to macerate for 12 hours and cooked for at least 3 hours.
The result is a jam rich in color and soft in taste, perfect for the most refined palates. To savor all its nuances, pairing with fresh and soft cheeses is recommended, but due to its delicacy, it also pairs well with white meats.
The last product intended for lovers of strong flavors is the extra red onion jam, left to macerate for over 12 hours and then cooked for at least two and a half hours with a bit of sugar. The result is a sweet-and-sour sauce perfect with super-aged cheeses (Stravecchio, Grana Padano, etc.) and Pecorino, but also with medium-aged cheeses such as Monte Veronese Stravecchio di Malga or Bagoss di Bagolino. Perfect also as an accompaniment to grilled dishes or platters of winter boiled meats, this jam will add color to your lunches and aperitifs.
