The figs are obtained from privately owned plants. They are small in size and are harvested when ripe. They have a skin quality that is not too thick to provide a better tactile sensation on the palate once placed in mustard.
Mostarda, as it is known, is a typical recipe from Mantova made with fruits and vegetables in a syrup of sugar and mustard essence. Therefore, it is particularly spicy, but Senga manages to produce them very balanced and delicate. With their own figs, they create this mostarda to pair with burrata, paglierina, mascarpone, blue cheeses, and Mantuan salami.
