Colognola ai Colli is a delightful village located east of the province of Verona. It rises to about 150 meters and is at the beginning of the sumptuous Val d'Illasi. A particularly breezy climate and a very unique soil since these hills were prehistoric submerged by warm tropical waters. Underwater volcanoes that poured out lava rocks, which today represent the rich mineral substrate where these little green pearls are grown: the dwarf green peas. Therefore, black soils with an excellent skeleton that favor the absorption of rainwater, thus avoiding excessive humidity stagnation. Furthermore, a breezy climate and temperatures that are not too hot are derived from receiving the cool night and evening breezes coming from the Carega massif at over 2000 meters in the Veronese Prealps. In Colognola ai Colli, efforts are being made to initiate the procedure for obtaining the Slow Food Presidia recognition. In fact, there are a few producers, and Orto2000 is one of the main supporters of this revival of this very sweet typical legume. The pea known as “biso” in these parts has been saved thanks to the vegetable gardens of private individuals who have not lost the genetics. Today, the small dwarf green pea is gaining increasingly important media attention from gourmets and quality traditional catering.
