Typical of the lands along the Adige, the asparagus is a vegetable that grows preferably on sandy soils with a small composition that allows it to break through the surface and rise towards the light, out of the ground. Right in Pescantina, on the banks of the Adige, where it mixes with ancient edible herbs like Tarragon, Dandelion, and Fennel, the Fontana family produces it in small quantities and of green quality without the covering technique to make it white.
Freshly tested, just produced on the farm, they are particularly sweet and tender with a beautiful intensity of aromas and flavors, not to mention that it is a vegetable rich in fiber and an excellent antioxidant. Once harvested and processed, the cream is produced.
Produced in a facility that uses nuts, celery, and mustard.
This asparagus cream is recommended with short pasta and a drizzle of freshly pressed extra virgin olive oil, still green and particularly bitter. Alternatively, it is ideal for the risotto of the Venetian tradition (risotto with asparagus) accompanied by excellent Monte Veronese DOP cheese in flakes. Great also for filling asparagus and taleggio ravioli with a bit of Sarawak black pepper.
