Plate arrangement. Genziana di Capra at 12 o'clock; Malga Novezza aged at 4 o'clock; Monte Veronese at 8 o'clock.

Servings per person. Minimum 70g (with a piece of 300g, 4 can be obtained)

Serving temperature. All at room temperature, max 20°C

Pairing. The pear and cinnamon compote by Erica Fontana from the Fontana BIO company pairs sweetly and harmoniously with the three cheeses, enhancing the flavor of the first two and containing the exuberance of the Presidio Slow Food.

Wine. We recommend a red wine that is not particularly structured and gentle.
