The Cuore di Bue is the ultimate salad tomato! It is an American-origin tomato that has found an excellent place in Italy. It has a beautiful fleshiness and very few seeds. Its consistency is substantial and crunchy if not completely ripe. In Val Varaita, the climate swings enhance the aromas and especially maintain a nice firmness that feeds the sensation of crunchiness on the palate. The flavor is also pleasant, as the lack of humidity and the complex mineral content of the soils make it particularly pronounced.
The Cuore di Bue is eaten in salads and is the ideal tomato for excellent succulent caprese salads. Moreover, it can be cut into chunks with fresh basil and wild mint or wild fennel. It can also be added to the caprese pizza at the end of cooking with some good DOP buffalo mozzarella from Campania. The cuore di bue is also used in the aesthetic preparation of bruschetta drizzled with extra virgin olive oil and a bit of fresh basil.
