The Ossocolo (it's spelled with just one 'c'...) is a typical salami from Verona and as is known, the Venetians never use double letters! It is a capicola to which salami paste is added, which can be seen in the mass of the salami. This blend allows for a softer meat in the capicola and a more pronounced spiciness.
The Ossocolo is a very flavorful cured meat that blends the sweet sensations of coppa meat with the spicy notes of traditional Venetian salami. A sensation of greater fattiness for the coppa or greater leaness for the salami. It depends on the perspective. Excellent when sliced and served on bread, perhaps still warm, as an appetizer in aperitifs or added to warm soft yellow polenta. Great with wines like Lugana, Valpolicella Classico, and Soave Classico.
