The name of this cheese always brings a smile and comes from an ancient Ladin term spretz tzaori which means tasty cheese. It is made from raw milk and is aged for about 90 days. Its rind always remains particularly humid. The milk comes from the Brown and Grey Alpine breeds that graze above 1000 meters.

It is delicious melted over soft yellow polenta. Perfect when paired with an aromatic wine, especially if it has a typical smoky note, such as a good Soave di Fattori, even better.
