The Ricotta Marzotica Torretta is a fresh sheep cheese typical of Puglia, named after its shape, which is indeed conical: a shape that resembles the famous trulli, the typical constructions found in Puglia, where this grattuggia ricotta is produced by Marte Formaggi, in the province of Bari.
The dough is compact yet crumbly, ivory-white in color, free of holes, and undergoes a short aging process lasting a maximum of 20 days; on the outside, this cheese is white or slightly straw-colored and has a net-like texture.
This type of ricotta is also defined as marzotica precisely because of its production period, which occurs from mid-February to May, characterizing it as a typically spring product. Its flavor is aromatic, intense, and strong, typical of sheep cheeses.

The Ricotta Marzotica Torretta is a ricotta typically for grating but it is really excellent also as a table cheese.
It is a product that has been used by shepherds for an eternity to flavor orecchiette or frise and friselle dipped in extra virgin olive oil and fresh cherry tomatoes.
This grating ricotta is indeed perfect for enriching the countless dishes of the Apulian culinary tradition but not only: being a salty and very aromatic cheese, it is also perfect for flavoring first courses, lasagna, filling ravioli or crepes.
It is therefore really surprising also for adding a touch of flavor to cooked vegetables such as, for example, friarelli or dandelion to make it less bitter.
