The name "sage" derives from the Latin salvus (safe - healthy) and refers to the healing properties of this plant, already known since ancient times.
Sage is a perennial evergreen species with a bushy growth habit; it features a branched stem that can grow up to 2 m tall with quadrangular section branches, finely serrated opposite leaves covered in fuzz. The flowers are blue or violet and appear around June - July. It is typically Mediterranean and widely distributed throughout Southern Europe. It grows spontaneously in rocky and arid soils and in stony areas between 300 and 1000 meters above sea level.

The sage leaves are subjected to drying in the shade, in warm, dry, and well-ventilated places or in a dehydrator so as to preserve the aroma and prolong its shelf life.
The Sicilian sage from Due Palmenti is cultivated according to the principles of a sustainable agriculture respectful of the environment through the use of organic fertilizers and the absence of synthetic chemical products.
All phases are carried out by hand, from transplanting, to weeding, until harvesting, drying, and packaging, thus imparting a strongly territorial connotation to the product itself.
