The Gola Stagionata 4 months by Del Sante is a salami that is part of the oldest Emilian pork butchery tradition. It is very delicious, flavorful, and retains the taste of yesteryear. In fact, like all other Del Sante products, it is handcrafted and nothing is added! It uses high-quality PDO Italian pork meat, which guarantees the highest quality in the aged product. As tradition dictates, the cut is prepared first, then the product is salted and pepper is added. It is then covered with a very thin layer of lard and left to age for 4 months with salt and pepper again.

Very flavorful and salty, it is ideal to be served on slices of warm toasted bread. The Gola has a nice aromatic intensity of pepper, and its spiciness harmonizes with the sensation of the meat and the salty fat of the pork. Creamy on the palate, it is particularly persistent. Excellent with dry white wines such as Soave Superiore DOCG, Roero Arneis, and Classic Method sparkling wines aged over 20 months. Additionally, it pairs well with sparkling red wines like Lambrusco Grasparossa. Perfect for rustic appetizers. A must-try with red onion mustard.
