The Gola Stagionata 4 months by Del Sante is a cured meat that is part of the oldest Emilian charcuterie tradition.
It is very good, flavorful, and still retains the taste of the old days. In fact, like all other Delsante products, it is handmade and nothing is added! High-quality Italian DOP pork meat is used, which guarantees the highest quality in the final cured product.
As tradition dictates, first the cut is prepared, then the product is salted and peppered. It is then covered with a very thin layer of lard and left to mature for 4 months with more salt and pepper.

The 4-month aged Gola is a product among all those produced by Delsante that we can truly consider rustic and with a taste of the past. Very savory and salty, it is perfect to be placed on slices of warm toasted bread. The Gola has a nice aromatic intensity of pepper, and its spiciness harmonizes with the sensation of meat and the savory fat of the pork.
Creamy on the palate, it is particularly persistent. Excellent with dry white wines such as Soave Superiore DOCG, Roero Arneis, Classic Method sparkling wines over 20 months. Additionally, it pairs well with sparkling red wines like Lambrusco Grasparossa. Great for rustic appetizers. Must be tried with red onion mustard.
