The lard is a product that could not be missing from the selection of the prestigious Salumificio Del Sante in Neviano (PR). Here, the tradition is purely Emilian and has been part of the family technique for decades.
The cut is from a national heavy pig. The piece of lard is placed in special white marble amphorae and covered with salt and various types of spices. Multiple layers are created until reaching full filling.
After this phase, the container is closed and left to mature for 9 months. This period has proven over the years to achieve an excellent flavor balance and a particular delicacy that does not overwhelm the aromatic value of the meat.

Excellent cold cuts to put on bruschetta and hot toasted bread. The Lardo melts gently and releases all its unmistakable aroma. Very pleasant on the palate, where it shows a velvety and creamy sensation and a distinct clean finish, with hints of dried fruit and spices.
Excellent with sparkling wines like Valdobbiadene Prosecco DOCG, Tuscan wines like Chianti, or even typical Emilia wines like Lambrusco Grasparossa. Great for wrapping chicken and rabbit rolls and flavoring succulent meat skewers.
