Ermenegildo Giusti wanted to prove with this wine that his beloved hills between Asolo and Montello have perfect soils for the production of a cuvée that enhances the most international grape varieties like Chardonnay and Pinot Noir. Grapes come from the beautiful cru located around the ancient Abbey of Nervesa della Battaglia (TV).
A wine with complex olfactory characteristics, featuring notes of golden apple, pear, and yellow citrus peel. A delightful sensation of brioche and fresh bread crust. Sweetly spicy with hints of ginger and turmeric. On the palate, it has a crisp bubble.
Overall, it has a creaminess that offers a lovely savoriness and freshness, along with a pronounced sensation of ripe fruit. The finish brings delightful crunchiness and toasted dried fruit.
An excellent sparkling wine for fish appetizers, grilled fish, and moderately spiced and complex first courses. Great also with beef tartare, particularly with hand-cut Charolaise or Limousin or Chianina IGP. It’s also worth trying with Asian cuisine for its ability to balance certain aromatic traits towards sweet spicy components.
