Amarone della Valpolicella Classico DOCG Giusti

Corvina, Corvinone, and Rondinella are the three grape varieties included in this great Veneto wine. On a calcareous, skeleton-rich, and well-drained soil, the vines are cultivated using the ancient pergola training system.

The grapes placed in crates are left to dry for 4 months in a fruit drying room, and in January, the red winemaking process begins with a maceration of 30 - 40 days in steel tanks. The aging then continues in 500-liter French oak tonneaux.

Alcohol content is 16 degrees.

The Valpolicella Classica. A treasure trove of quality amidst vineyards and marls, in an ancient landscape in the Marano valley. A small property that Ermenegildo Giusti wanted to make his own to produce a great wine from the Venetian tradition. Made from the drying of typical red grapes from Verona, this Amarone expresses all the value of the fossil marls of the most authentic Valpolicella.

Amarone della Valpolicella Classico DOCG Giusti: use in the kitchen

The Amarone by Giusti presents a great olfactory complexity where clear sensations of maraschino cherry and black pepper emerge. Then small black fruits in jam and dehydrated plum. Sweet spices of cinnamon and cardamom.

You can clearly perceive the typical sensations of aging in oak, elegant and precious, of vanilla, chestnut honey, dark chocolate. On the palate, it expresses a beautiful freshness despite a significant alcoholic component and a nice sapidity. The glyceric component gives softness to the wine and makes it enveloping and sinuous, equipped with straightforward and well-calibrated tannins. A finish of toasted dried fruit and black spice. 

Great wine for braised dishes, grilled Chianina IGP meats, with very aged cheeses, Parmigiano Reggiano DOP 40 months, Bitto DOP of 36 months. To be tried with touches of 80% dark chocolate from some South American crus like Colombian Chuao. Excellent for accompanying romantic moments of passion by a fireplace and the pleasure of an encounter.
