The harvest is carried out in two different stages. First the Bordolese grapes and then the Recantina.
It involves a complex blend that includes maceration of the skins on the must for about 15 days, followed by aging in barriques for 12 - 14 months.
This provides the wine with significant complexity and structure.
The Bordeaux tradition of the Treviso area is enhanced in this wine by a percentage of local viticultural history and tradition. In fact, along with Merlot, Cabernet Sauvignon, and Cabernet Franc, we find the ancient grape variety of Recantina, of which Giusti also produces a pure wine. Thus, a product that alternates the elegance and solemnity of Bordeaux with a more territorial identity typical of the Montello hills.
Elegant wine with local character. Well-structured with a beautiful fruity and spicy complexity and a pleasant vegetal component that evolves over time into intriguing balsamic sensations. Red fruit, cherry, small fruits, drupes, and purple rose. Black pepper spice. On the palate, great freshness with a characteristic tannic note. Almondy and fruity finish. Persistent.
Excellent for meats and braises. Pairs well with medium to high-aged cheeses from the Veneto and Friuli traditions. A must-try with typical fatty and spicy cured meats from Emilia.
