This is a work of art: very soft on the inside and drier towards the crust; sweet and creamy on the palate with a lovely sensation of fresh grain; a thick crust that is not too hard, accompanying a very fragrant soft dough.
It should be kept in a cool environment, but not refrigerated, with the right humidity. For purchases over a kilo: cut into quarters and place in the freezer or in a blast chiller. Afterwards: thaw at room temperature and then put in a warm oven before serving on the table.
